kiwi & salmon ceviche

kiwi and salmon ceviche recipe by Angela Langford

Ceviche is a South American dish, which uses citrus fruits to cure raw fish. In this dish, tangy, vitamin rich Kiwis are added with limes to do the job, resulting in a dish that will tantalise your tastebuds and do wonders for your omega and vitamin daily intake. Serves 4 people.

2 kiwi fruits

400 grams boneless and skinless very fresh salmon fillets (organic if possible)

½ red onion

1 medium red chilli

½ celery stick

juice from 2 limes

zest of 1 lime

pinch of chipotle chilli powder or cayenne pepper

pinch of celery salt

1 tsp pink peppercorns

glug of olive oil

Handful of coriander cress or coriander leaves (optional)

Remove the skin from the kiwi fruit and cut into small dice.  Dice the salmon or finely slice it. Finely dice your red onion, finely chop your chilli and cut the celery into fine dice. Place everything in a non-metallic bowl together with the juice of 1 – 2 limes and lime zest.

Add a pinch of chipotle chilli powder and season with celery salt and the crushed pink peppercorns (or use black pepper). Mix everything together so that the salmon is coated in the curing mix. Cover with clingfilm and put in the fridge for about 10 – 20  minutes. You can leave it for longer – but no longer than an hour.

Dress with a little olive oil, the coriander cress and check the seasoning adding more celery salt, pepper or chilli if required.
