These are totally delicious and make a lovely snack in their own right but can also be used to garnish pumpkin soups or salads.
100g pumpkin seeds (organic if possible)
splash of soy sauce
big pinch of chilli flakes
Heat your oven to 180°C. Mix the pumpkin seeds, soy sauce and chilli flakes together in a bowl to coat the seeds. Scatter over a baking sheet and roast in the oven for about 5 – 10 minutes until well toasted.
It’s as simple as that but the taste is so much more than the effort - enjoy!
